You want the deepest pools and the most scrutinized contracts, and you are trading on a major network.

Full SushiSwap pageUniswap on the major networks, without much argument. SushiSwap earns its place on the long tail of chains, where being deployed on thirty networks is genuinely useful.

The parts that change the answer
The history matters less than it did
SushiSwap began in 2020 as a fork of Uniswap that incentivized liquidity away from it. That is interesting as history and it is not a reason to pick either one today.
Coverage against depth
SushiSwap runs on far more chains. Uniswap has far more liquidity on the chains that matter most. Which one wins depends entirely on where you are trading.
Routing
SushiSwap routes across other venues as well as its own pools, which can beat a single pool quote on a thin pair.
