A smart contract is a program stored at an address. Anyone can call it, and it executes deterministically on every node. Once deployed, it usually cannot be changed.
That immutability is the point and the danger. Nobody can censor it or alter the rules, and nobody can fix a bug either unless upgradeability was designed in from the start.
A Uniswap pool is a smart contract. It holds real assets and follows its formula with no operator involved.
